  • 200 g dark chocolate (70% cacao)
  • 3 large eggs, yolks and whites separated
  • 60 g caster sugar

For the Cherry Compote

  • 300 g cherries
  • 150 g caster sugar
  • Juice and zest of 1 orange

For Serving

  • 150 ml double cream
  • 1 tsp vanilla paste
  • 30 g caster sugar
  • 6 extra cherries for garnish
  • Orange zest for garnish

Step-by-Step Instructions for Coffee Mousse Recipe

Follow these steps to create your delicious mousse.
It’s not as hard as it might seem.

1. Make the Chocolate and Coffee Mousse

1. In a small bowl, dissolve the instant coffee in 125 ml of boiling water.

2. Place the dark chocolate in a heatproof glass. Place the bowl over a saucepan of gently simmering water. Make sure the bottom of the bowl doesn’t touch the water. Pour the coffee mixture over the chocolate. Stir slowly until the chocolate melts. Keep mixing until the texture is smooth and creamy.

3. Take the bowl off the heat and add three egg yolks, stirring until everything is well mixed.

4. In a large bowl, beat the egg whites and caster sugar with a stand mixer or hand mixer. Keep mixing until stiff, shiny peaks form.

5. Carefully fold the stiff egg whites into the chocolate mixture in two parts. Be careful not to crush the air bubbles in the egg whites.

6. Once everything is well combined, divide the mousse evenly into six glasses. Place them in the fridge for at least two hours to firm up.

4. Take the mixture off the heat and let it cool down completely.

4. Add a fresh cherry and a little orange zest as a garnish.
