The Secret Noodle Technique

While the dough rests, let’s prepare the “noodles.”

  1. Divide the dough into small balls and roll them out into very thin rotis.
  2. Take a large, wide pot and boil water with a little oil.
  3. Carefully drop the thin rotis into the boiling water.
  4. Cook them for about 5 minutes until they are firm but tender.

Once cooked, drain the water and let the rotis cool. Apply a light coating of oil on each roti so they do not stick together. Now, fold the rotis and cut them into very thin strips. Voila! You have perfectly fresh, homemade chowmein noodles.

Preparing the Chicken and Veggie Base

For the stir-fry, prepare a colorful combination of vegetables. Thinly slice an onion, capsicum, cabbage, and carrots into long “julienne” strips.

In a separate bowl, mix the veggies with salt, black pepper, chili sauce, soy sauce, and a splash of vinegar. For the chicken, cut it into finger-shaped strips.

The Final Sizzle

Heat oil in a wok. Add ginger-garlic paste and the chicken strips. Sauté them well. Now, add a fresh tomato puree (made by grinding one large tomato).

  1. Take a small piece of dough and place a cube of paneer (cottage cheese) inside.
  2. Roll it into a small ball and then flatten it slightly.

While the petals are ready, let’s make the center filling. Finely chop onions, capsicum, carrots, and sweet corn. Mix these vegetables with a generous amount of pizza sauce and shredded mozzarella cheese.

Place the stuffed dough ball right in the center of your paneer petals. Brush the top with a little milk or egg wash and sprinkle some sesame seeds for that professional look.

  • 2 tbsp Chili Garlic Sauce
  • 3 tbsp Ketchup
  • 1 tsp Salt and 1 tbsp Black Pepper
  • 2 tbsp Lemon Juice and 1 tbsp Soy Sauce
  • 1 tbsp Ginger-Garlic paste
  • 1 tbsp Red Chili Flakes
  • A drizzle of oil

Mix the chicken in this marinade and let it rest for at least 2 hours. Consequently, the lemon and vinegar will tenderize the meat perfectly.

The Signature Spicy Dip

While the chicken marinates, let’s make a quick dip. Mix 4 tablespoons of mayonnaise with 1 tablespoon of ketchup. Season with a small amount of salt, chili flakes, red chili powder, and a dash of lemon juice. This creamy, spicy sauce is the perfect companion for fried chicken.

The Frying Process
