- 200 g dark chocolate (70% cacao)
- 2 tsp instant costa coffee
- 3 large eggs, yolks and whites separated
- 60 g caster sugar

- 300 g cherries
- 150 g caster sugar
- Juice and zest of 1 orange

- 150 ml double cream
- 1 tsp vanilla paste
- 30 g caster sugar
- 6 extra cherries for garnish
- Orange zest for garnish
Step-by-Step Instructions of Coffee Mousse Recipe
Follow these steps to create your delicious mousse.
It’s not as hard as it might seem.
1. Make the Chocolate and Coffee Mousse
1. In a small bowl, dissolve the instant coffee in 125 ml of boiling water.
2. Place the dark chocolate in a heatproof glass. Place this bowl over a saucepan with gently simmering water (ensure the bottom of the bowl doesn’t touch the water). Place the coffee mixture on top of the chocolate and gently stir until the chocolate is fully melted and smooth.
3. Take the bowl off the heat and add three egg yolks, stirring until everything is well mixed.
4. In a separate large bowl, use a stand mixer or electric hand mixer to beat the egg whites and caster sugar until they form stiff, glossy peaks.
5. Carefully fold the stiff egg whites into the chocolate mixture in two parts. Be careful not to crush the air bubbles in the egg whites.
6. Once everything is well combined, divide the mousse evenly into six glasses. Place them in the fridge for at least two hours to firm up.

2. Prepare the Cherry Compote
1. Cut the cherry in half and take out the pits.
2. Put the halved cherries in a saucepan with the caster sugar, orange juice, and orange zest.
